I’ve enjoyed many dinners at Chandler’s but there is one that stood out. During the end of November of last year, an importer of Italian wine was with me and we decided to enjoy a meal at your restaurant. Owning to my friend’s knowledge of wine, he selected the 2006 Produttori del Barbaresco Barbaresco off of the list and we enjoyed truffle oil fries as an appetizer. In our discussions, the conversation swung back to the perfect Italian wines for steak. While the Barbaresco paired beautifully with the fries, we thought something with a bit more heft would be great for steak. My friend then told me of the most perfect pairing he’s ever had – Brunello di Montacino and “Bistecca Florentina”: a simply prepared t-bone cut of a heritage breed called Chianina. Our server overheard this and said he could let the chefs know if we wanted to try a version of it (minus the heritage breed, of course). We quickly agreed and gave the server instructions to pass on to the kitchen. Meanwhile, my friend produces a bottle of 2006 Argiano Brunello di Montalcino from his bag and says if we’re going to do this, might as well do it right. What followed was one of the most memorable dinning experiences of my life. The steak was cooked perfectly with high quality olive oil and a dash of fleur de sel lightly covering the meat. Food and wine pairings are interesting and sometimes very difficult to master. That evening, perfection was achieved. Cheers to a memorable evening!
